I want to attempt to post meatless recipes on Mondays but I have an issue with that because this is not coming from a political place and certain cities with certain beliefs use that phrase but seriously…Meatless Tuesdays? Meatless Saturday? It just doesn’t ring! I have good news though, I will not post a Vegetarian or Vegan recipe if it’s not approved by carnivores. My goal is to make everyone eat their veggies and enjoy them a lot!
6 cups of water + your favorite vegetable broth
1 tablespoon of sea salt (or however much you want. You can do whatever you want with cooking!)
5 cloves of garlic
1 can of black beans (or you can do two)
2 cans of 8 oz tomato sauce
5 chopped carrots
2 chopped potatoes
1 teaspoon red pepper flakes
3 cups of kale
1 chopped avocado
A couple sprigs of thyme
Boil your 6 cups of water, add your broth and simmer. Add every ingredient except for kale, thyme and avocado. Simmer the stew for 20 minutes. Add kale and take the pot off of the stove. Let sit for 3 minutes and serve. I like to top my bowl with avocado and thyme. Add salt and pepper to taste.
This stew is very hearty and tasty, no one mentioned anything about meat, or lack there of. I didn’t want to fill up on soup, so I just ate veggies. I’m also the person who can’t finish the broth in Pho or Ramen…so….
