What you need:
Extra Firm Tofu (I use Naysoya, Non-GMO/Organic)
Jasmine Rice (cooked)
Your favorite nonstick cooking spray
My favorite thing to do in life is prove people wrong. Just kidding, that’s probably my second favorite thing to do. If you don’t know how to handle tofu properly, you’re going to screw it up. A lot of people have a bad experience with tofu because of ignorance, plain and simple. I know picky eaters, and I’ve noticed two things:
1. They eat anything from a grill
2. They love Sriracha
Drain your tofu. It’s super important to remove excess moisture. Wrap your tofu in a clean kitchen towel, and wrap again with another. Place two books on top of the tofu and wait 30 minutes. Let me stress this again, YOU MUST USE EXTRA FIRM TOFU. Cut it up into pieces and marinade in Sriracha for at least 30 minutes, but you may also marinade over night.
Heat up your grill, spray with non-stick cooking spray and grill the tofu for about 5 minutes on each side (or until there’s grill marks). It’s fairly quick. The same thing goes for zucchini. Add your tofu and zucchini to a bed of Jasmine rice and you’re good to go!
