Since we carved a pumpkin this year, I got to make my first batch of Pepitas. I didn’t want just plain salted pumpkin seeds, nor did I want sweet. There’s just something about Curry and I can never turn it down. When I googled recipes, majority of them said the same thing: Cover in olive oil, bake at 250 degrees for an hour or until golden brown.
While I preheated the oven, I coated the pumpkin seeds in a tablespoon of olive oil, one tablespoon of curry powder, and half a teaspoon of Kosher sea salt. These babies were baked for exactly an hour. I am a happy camper, they’re so delicious!
