Game Day is huge in this house. We’re from Miami, but also rep Philly, so that means football (NFL AND college, GO CANES!), basketball, hockey, and baseball. Just imagine what it’s like around here. Food is a big part of the day, I’m not going to lie, it’s my favorite part of game day.
Like most people, I love to entertain, but it can be lots of work, and time consuming. Recently, I had the opportunity to try Old El Paso’s Taco Dinner Kit (Stand ‘n Stuff).
Before I get into how awesome this taco kit was, let me jump into my guacamole recipe because you should prepare the homemade guacamole first.
5 large Mexican avocados
2 large limes
1 medium red onion (diced)
3/4 cup loosely packed fresh cilantro (chopped finely)
1 large tomato (Diced-make sure it isn’t overly ripe)
1 teaspoon of cumin
2 cloves of garlic
finely chopped fresh jalapeno (optional)
- Slice avocados in half. Discard the seed. Scoop out of shell with a spoon. Place in bowl.
- Add juice of one fresh lime immediately to prevent browning. Use a fork and mash to desired consistency.
- Add chopped onions, garlic, tomato, cumin and cilantro.
- Add juice of second lime and then salt to taste.
- Add jalapeño
- Use a food processor with all the ingredients to make for a VERY creamy dip.
My guacamole is so delicious and easy to make. All you need is 5 minutes.
When the guac is done, it’s time to start your tacos. I chopped up my favorite toppings, which took a few minutes. It was time to cook the ground beef. All you do is brown the meat, add some water, and a packet of seasoning. Your taco filling is done in 7 minutes. BOOM!
I love the stand up shells!
These are great if you want to make your tacos a little bit before your guests arrive. By the time they arrive, the tacos will be set and ready to eat.
