Most of the states have about a month to enjoy summer, but here in Florida, we won’t feel fall weather until November. In the meantime, I think everyone should enjoy the last days of this season with a summer fiesta. Whenever I hear “fiesta”, I think of tacos. Today, I’m going to share a healthy taco option and a giveaway (below!!)
If you’ve been keeping up with me, I have Germany on my mind. Because of this, my workouts and diet have been on point. Whenever I eat tacos, I always get the works and they’re definitely not diet friendly. But you know, I always find a solution..
A couple days ago, I purchased an Aroma Rice Cooker/Slow Cooker/Food Steamer.
I’m so obsessed with it. The first time I ever used it, I baked a cake. My mind was blown. I’ll save that story for another day!
I chose to make shrimp tacos instead of my usual steak or carnitas.
Seasoned with salt, pepper and red pepper flakes.
Three ounces of shrimp are 83 calories, 1 gram of fat and 18 grams of protein. It’s also loaded with vitamins such as vitamin D, B12. Also, Omega-3 fats and the amino acid tryptophan.
and of course, steaming is easy, no added oil….
and ready in 5 minutes.
Instead of lettuce, I used chopped cabbage. The bags are sold in the salad section. 10 minutes before I cooked the shrimp, I made a lime and garlic dressing:
Fresh lime juice (two limes)
Handful of cilantro
1 clove of garlic
Dash of salt and pepper
Marinade the cabbage in the dressing.
I used Old El Paso’s Stand and Stuff because they’re convenient. Add everything in the shells and you’re done! =) Super delicious, filling and healthy!
