Correction: Stuart and I were very wrong. Using a microwave or stove is not suggested on the back of the box. I was laughing so hard after. The question came out of nowhere and my mind went blank. Hey guys! This is going to be a bit longer than my typical post. I’ll tell you about my media day and share a great way to meal prep for lunch during the work week.
Sometimes I’m asked to go on WESH 2. Since I’m a Lifestyle Blogger, I have talked about everything from Travel, Products, Food and Events. But I love food the most, everyone knows that.
This journey started less than a year ago. When I was first asked, I wrote out an email thanking them for reaching out to me, but I wasn’t a good fit for live TV. Six months prior, I had to speak in front of a panel of brand reps. I just stood there, shaking, barely able to speak. How could I go on live TV in the city I live in?
For whatever reason, I contacted Vanessa to ask her thoughts. To make a long story short, she told me I would be crazy to pass up an opportunity like this. She’s one of the reasons why I even blog. Vanessa took me under her wing, showed me the ropes and even cleaned up my mistakes (HTML is so hard, God bless her.) A couple weeks after my first segment, she was asked to do a segment in Louisville. How cool is that?
When I was in the green room, I shook so bad as I waited to go into the newsroom. I kept praying that this wouldn’t be panel day part two. I’m pretty sure Stuart Moore could sense I was anxious. He reminded me that there were only five of us in the studio, that it’s not scary at all. Stuart broke the ice with college football. He’s a FSU fan, I’m all about the U (Miami!!!!!). Imagine that exchange, just kidding! I also kept all of this a secret until after the fact. Only a handful of people knew I would be on TV. Do something that terrifies you. You’ll never know what doors will open.

Now that I’m comfortable with my family and friends watching my segments, I get the funniest screen shots. This is my “AY YO, I’m from South Philly and talka with my hands!” look.
My side eye stays fresh.
I’m big on meal prep. I love to cook. Home cooked meals are always my preference over take out. For whatever reason, people think that meal prep is time consuming. Last week, I picked up Betty Crocker’s Suddenly Grain Salad ( Southwest Grains ) for my lunches this week.
Brown rice, quinoa, with black beans, corn, red peppers and a chipotle vinaigrette.
I made my lunch for the week in under 20 min, guys.
UNDER 20 MIN. NO EXCUSES.
Carefully place bag of grains in gently boiling water, whatever that means.
Put your chicken breast in the steamer. Add salt, pepper, red pepper flakes.
Make dressing that’s included in the box.
You know me, I have to add cilantro.
More cilantro, yes!
After you remove the bag from boiling water, run cold water over the bag for two minutes.
Stir dressing into the grains.
Prep your mason jars. This was too easy.
I always put my grains on the bottom, add protein, tomatoes and bell peppers. Top off with spinach. BOOM!
Pick up single guacamole packets to take it to another level.
Never ever prep with fresh avocados. They will oxidize and ruin your life. Every time an avocado goes to waste, my life is ruined. These little packets are genius!
Meal prepping is cost effective, healthy and you’re not going to find anything better than this. When I go out for lunch, I typically get a salad topped with protein. I always say “I paid $15 for that ?”. You guys can make a week’s worth of meals that actually tastes great for that price. On top of that, you’re in charge of portion control and know exactly what you’re putting in your mouth. Majority of the salads at restaurants have just as many calories as a pizza or burger.
Another thing that stood out was that it doesn’t taste boxed. I’m going to sound snotty, but I do not care for most boxed foods. They taste so synthetic to me. The next time I’m at the store, I’m stocking up and taking advantage of their coupon.

I love when I get to spend my mornings at WESH 2 News. My call time for this segment was a bit later than usual, but I still had to start my day early.
I actually didn’t sleep. My little Oreo had a bad episode. I spent my night crying 🙁 It’s hard having a geriatric pet. No worries, ToGo Spa Eye patches save the day! (and she’s been doing fantastic today!)
Brittany arrived at my home at 6 am for hair and makeup.
Funny story, I needed a makeup artist last minute. Brittany was my last and only hope. The both of us have never met, nor did we have references or mutual friends. We thought we were Catfishing each other.
“Hi, I need you to drive out to the middle of nowhere at 6 am so I can go on TV.” It just sounds weird and I didn’t even think to say “here’s my blog, I’m for real.” because, who does that?
Great news, the both of us are not serial killers. Brittany did an amazing job. It turns out, we do have mutual friends!
I got to hang out and talk about International Breakfast Month.

Time to work. I ate my prepped lunch, but it was so ugly. Not posting ugly food pictures.
After work, I crashed in my guest bedroom and had the best sleep ever. However, I woke up confused. It’s the worst thinking it’s 7 am the next day. I needed to get out of the house, so I decided to disturb the peaceful little town of Mount Dora. Anyone else crash passport photo photo shoots?
