Last month, I was introduced to the Bertolli Riserva line. Their Asiago Cheese & Artichokes sauce had me hooked.
I stocked up on some of their other sauces.
For whatever reason, I’ve been craving lasagna and pastas lately. Maybe it’s because it’s the holiday season and I miss my family in Philly. I’ve spent many Christmases there, so I associate Italian food with the holiday season.
But because it is the holiday season, I try to make smarter meal choices because I don’t hold back on the drinks and desserts. It’s the worst thing to hear “I’m on a diet” when you offer someone a delicious Christmas goodie. Girl, please! Live a little!
For dinner, I decided to make Chicken Cacciatore with the Balsamic Vinegar & Caramelized Onions sauce. This was so simple, no need for a recipe.
Dredge 4 chicken thighs with flour (I used gluten free rice flour), add salt and pepper to season. Fry in pan on medium heat for 5 minutes on each side.
In a separate pot, add Bertolli Riserva sauce, 2 tbs of capers, 1/4 green bell pepper, and add chicken. Stew everything together for 20 minutes. Add basil and parmesan cheese on top.
I still eat pasta when I’m low-carbing, but I add a lot of spinach. Cook pasta business as usual. One minute before it’s done, throw in raw baby spinach. Extra nutrients and you’re not left feeling hungry. It’s a win/win.
