I gave some of my favorite tips on staying fit during the holidays on my blog, Well, December 24th hit and I went ham on every dish offered to me. My grandma made 22 dozen cookies, my Filipina cousins were in town, so that meant Filipino feasts through out Christmas week. If you follow me on Twitter, I’ve been making ” I want pasta/lasagna for breakfast” announcements since October. Well, I made my dreams come true (it seriously doesn’t take much to make me happy.) and ate pasta almost every day during my two week vacation.
The calories add up. My jeans are a bit snug and I’m rocking a belly. It’s time to get back to my usual #fitlife mode. So many of you made health related resolutions and I have tasty, guilt free and low carb recipes for you all to check out.
I recently picked up jars of Ragu at my local Publix. Did you know that Assunta Cantisano created the Ragu recipe? Neighbors formed long lines on her porch insisting on fresh batches of her family recipe. Her popularity grew and soon enough, she sold her delicious sauce in upstate New York.
All you’ll need for this deliciousness is a zucchini spiralizer, zucchini, and your favorite jar of Ragu.
Simmer the pasta sauce on the stove for 5-10 minutes. When it’s nice and hot, spiralize your zucchini.
I have an All Times Finest spiralizer that I purchased from Amazon years ago.
It’s pretty awesome
Zap the zucchini pasta in a microwave safe bowl for 35 seconds.
Sometimes there’s a little bit of water from the zucchini, drain it.
Top with fresh pecorino romano.
Delicious, guilt free and healthy.
