Happy Saturday! Everyone knows I’m always on the hunt for #fitlife subs that actually taste amazing or better than the regular stuff. A few months ago, I came across The Skinny Confidential’s Instagram. You know how there’s tons of beautiful girls on IG, but they get boring after awhile because they lack sense of humor or don’t know crap about crap? Lauryn is truly one of a kind. She kept posting about watermelon jerky, something I’ve never heard of but after seeing so many dang posts, I knew I had to make it.
Lauryn was so hyped about this stuff, swore up and down that it tastes like a Jolly Rancher. It sounds pretty crazy, considering it’s JUST watermelon, but I’m here to confirm that watermelon jerky is legit and The Skinny Confidential really knows what’s up.
Tajin (if you want to make a spicy batch)

And you’ll need a dehydrator
I like to use “personal watermelons” (yes, the small melons I get say that on the sticker). I’ve chopped up big watermelons and it’s a hassle, tbh.
Cut your watermelon into inch slices, remove the rind, cut slices to 1/4 inch thick. I’ve played around with the cuts, seriously follow the directions. You don’t want it too thick because the watermelon with sog, no matter how long you cook. Slices that are too thin are so hard to remove from the dehydrator pan.
I squeeze fresh lemon juice on every single piece of watermelon. But on the bottom dehydrator trays, I add Tajin seasoning. This gives me two different batches of jerky, love!
Cook at 135 F for 18 hours.
Remove pieces RIGHT away. If you leave it on the tray, the watermelon will get stuck. It’s such a waste. I’m telling you, I’ve played around with so many techniques.
Store in a mason jar.
Hide from your family.

If you were wondering what I did all summer, I basically worked my ass off and made 20 batches of watermelon jerky. But seriously, this tastes better than candy and there isn’t added sugar and garbage in the mix. I’m beyond obsessed with this snack, I can’t stop. You guys need to make it ASAP.
If you like sweet/tangy/spicy you’ve got to make the tajin one. UNF. The flavors are so perfect.
