Hello my fabulous busy bees. I wanted to share my brunch from today since you’re all so preoccupied but trying to stay on track with #fitlife . It’s hard, I know. Planning ahead is key, trust me. If I don’t keep my house stocked with healthy options, I end up hangry. There’s been many times that I’ve rummaged through the pantry like a psycho, making horrible choices. Because I had guests this week, I knew I should double up on snacks and meals.
Almost every weekend, I meet my friends for brunch. It sounds so basic, but I look forward to our dates. Food, catching up and shopping, what more can I ask for? But this weekend, I need to chill. It was my time to roll out of bed w/o an agenda. Plus, I wanted to make brunch for my family and hang around in our PJs.
While I was grocery shopping, I came across these Lean Pockets. It seemed convenient and tasty. Check out my video and brunch prep below. Spoiler alert: they were a hit.
I started off with the Chicken, Broccoli & Cheddar first since you have to bake them in the oven for 30 minutes.
Since the Chicken Jalepeno & Cheese is pretzel crust, it had to be zapped in the microwave for 3 minutes, not baked in the oven. I did this at the end.
I chopped up produce while the pockets baked.
Threw a salad together
I love fresh fruit on a hot summer day, especially star fruit. I snapped the spread on SnapChat earlier and my friend Mia (Hi Boo!!!) asked how I cut my fruit into star shapes. It made me sad because I realized she never seen this before. I’m not sure if it’s a regional thing, but we definitely have trees here. I wish I could send everyone star fruit.

Everyone enjoyed themselves without feeling guilty. I’m all about that balanced life.
It’s nice to find healthy options that are actually yummy and satisfying.
