I’m so obsessed with sharing recipes that aren’t really recipes with you guys. You know what I mean? You just need to get the ingredients, throw them together because measurements aren’t really required and put it in the oven.
This month, I’m working on a campaign that’s near and dear to my heart. I’ve been shooting on and off through out the month, but I had to do final shots after my family trip to Marco Island, where we basically ate everything in sight. I actually held off on posting more food pics, ha! Anyways, my point is, when I got my last set of pictures back, I laughed so hard. You can tell I had a great vacation, I’m a bit puffy. 🙂
My body wants tons of veggies right now. Since I picked up this new Homestyle Ragu Thick & Hearty Roasted Garlic sauce, I thought it would go great with zoodles, but I saw someone make zucchini roll lasagna on Youtube and wanted to try it. Y’all know I’m all about low carb pasta substitutes!
1 jar of your favorite Ragu sauce
1 cup ricotta cheese
1 cup grated parmesan
handful of fresh, chopped Italian parsley
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
I tried to cut the zucchini very thin with a knife. That didn’t work out, so I used this thing. Yeah, no clue what it’s called. Maybe it’s a cheese cutter? Perhaps it’s a zucchini slicer? IDK. It made the perfect slices that were easy to roll.
It saved the day.
Grate your parmesan cheese
Add the cheese, ricotta, egg, fresh parsley and spices together.
Add a layer of Ragu to your pan.
Spread the cheese mixture onto the the zucchini slice, add a bit of sauce, cheese and then roll it. Place in pan right side up.
Add more cheese on top.
Bake at 400 degrees F for 30 minutes.
This was such a great substitute. Super filling and delicious!
