Before I show off these captivating pictures of Duke, I have to share two super easy and tasty holiday appetizers with all of you. The end of the year is my favorite season. It starts with football, then Thanksgiving and last but not least Christmas and Hanukkah festivities! Because I have a mixed family, there’s so many parties and traditions. If you’re new around here, I have Latinos, Filipinos, Jewish, Italian and Southern folk within my tribe, so you can imagine all celebrating that happens around here. Like most Americans, my time is limited. As we close out the year, deadlines are due and of course, preparing for all the holiday hoopla.
You all know I have your back. I’ve got a couple easy appetizers that you can make in under 20 minutes. Not only are they delicious, but they’re festive. I’m all about a presentation, especially if it’s simple but wows the crowd.
- 2 8 oz cream cheese packages
- 1 cup whole almonds
- A dash of sea salt
- A dash of pepper
- 1 chopped jalapeno
- 1/4 cup chopped chives
- 1/4 chopped pepperoni
- 1/4 cup of shredded pepper jack cheese
- 4 sprigs of fresh rosemary to decorate
- Mix all ingredients together except for almonds and rosemary.
- Be sure to mix well.
- Shape the cheese mixture with your hand into an oval to resemble a pine cone.
- Place on plate.
- Cover the cheese ball in almonds, starting from the tip of the cone and up.
- Garnish the plate with rosemary to look like pine needles.
No recipe needed. All you need is fresh rosemary, shape into a wreath.
Place your favorite olives, gherkins, and cheese on the green to look like ornaments.
My personal faves are: kalamata, castelvetrano, garlic stuffed olives, and mozzarella balls.

I just spent the weekend in Raleigh, NC with my family. My cousin Lynde graduated from North Carolina State University. I’m beyond proud of her and thrilled that I got to join all the fun festivities.
She suggested that we all go ice skating a few days prior to my arrival. Ice skating day rolled around and I wasn’t feeling so hot. The thought of falling down on ice in 20 degree weather didn’t sound fun anymore. My cousin Brandon said that we should play Paper -Rock -Scissors to determine my destiny. If I win, I stay in the warm hotel. If I lose, I freeze with the gang. This is how grown ups do business, okay?!
And I’m so glad I lost. Not only did I find out that I’m pretty good at ice skating, but I had the best time ever with my cousins. I was too numb to think about my sore throat and way too busy laughing and racing everyone.
That was one of my favorite memories from this year.
I grew up surfing and skating, this was easy for me to pick up right away. Brandon is an athlete, so us FL kids showed off, duh. This was the first time I got to hang out with Lynde’s boyfriend, Joe. He’s so fun and another ice skating champ.
